CARIBBEAN STING
As the popularity of hot peppers has grown, so has my desire to use them in a recipe. I chose the Trinidad Scorpion as the lead pepper in CARIBBEAN STING. CS is the sauce that has people coughing, hiccuping and sweating bullets. CHOCOLATA LAVA
Several years ago, a childhood friend who’d moved to Texas sent a box of Chocolate Habaneros he had grown. I immediately began to think about how I could make a Chocolate AWE-SAUCE. I wanted to make a hot sauce that had good heat, a little sweetness and chocolate character. CHOCOLATA LAVA is that sauce. DREE PEPPA
Over the years as I worked to develop recipes, I would make batches of hot sauce and give bottles to friends when we had parties or visited with them. I gave a set of the three to a friend to sample. She used them and the next time we talked, she said “You need to make a jerk hot sauce.” I’d been to Jamaica and have had jerk food but had never thought about making a jerk hot sauce.
