Over the years as I worked to develop recipes, I would make batches of hot sauce and give bottles to friends when we had parties or visited with them. I gave a set of the three to a friend to sample. She used them and the next time we talked, she said “You need to make a jerk hot sauce.”
I’d been to Jamaica and have had jerk food but had never thought about making a jerk hot sauce. I studied some existing jerk sauces to get a handle on the spice mix I wanted to create. I decided to use some of the hottest peppers in the world in the sauce that would eventually become DREE PEPPA the fourth AWE-SAUCE. Of the nine AWE-SAUCES, DREE PEPPA is the most complex in flavor and ingredient mix.
